French Zucchini Summer Salad (Courgettes Salade)
It's hot, and the last thing you want to do is slave away in the kitchen. Here's a summer salad recipe sure to impress, full of delicious cooling zucchini, mint and farm-fresh yoghurt.
Ingredients
- 2 large zucchinis thinly sliced or grated
- 100 ml natural yoghurt adjust according to desired texture (ie not too runny)
- 1 handful mint finely chopped
- 1 clove garlic finely chopped
- Salt and pepper to taste
Instructions
- Place grated zucchini into a large serving bowl.
- Mix through the mint, garlic and enough yoghurt so that the desired texture is reached. The salad mixture should stick together nicely without being too runny.
- Season to taste with salt and pepper.
